As many of you have seen my super simple, yet super yummy gluten and dairy free plantain bread I make year round - Something fun and festive for the season here we are trying it with a pumpkin twist! And for all my vegans out there, this recipe can be easily adjusted to make the whole thing vegan without compromising on flavor or texture.
Ingredients:
1 Full Can of Pumpkin
4 Ripe Plantains (The riper the sweeter the bread will come out)
1/2 tsp Salt
1/2 tsp Baking Powder
1/2 Cup Melted Coconut Oil
1 Cup Gluten Free Flour (I use Cassava or Coconut Flour)
5 Whole Eggs ( or use egg replacer to make it Vegan)
Pumpkin Pie Spice to top
(Optional) Honey to drizzle when serving
Recipe:
Preheat your oven to 350 degrees
Combine all ingredients in a large mixing bowl using an immersion blender or blend all ingredients in a blender on high / until batter is creamy smooth.
In a well oiled baking pan ( I like to use coconut oil to line the pan) pour the smooth/ well mixed batter in and distribute evenly. Top with pumpkin pie spice and once the oven is done preheating, pop the bread in the oven for 40-55 minutes ( time will vary depending on your location, I'm at altitude so it took a little bit longer to bake)
Let the finished bread sit for 10-15 minutes before enjoying!
Nutritional / Health Benefits of this Bread:
Pumpkin and Plantain by themselves have wonderful health benefits and nutritional value. Plantains and pumpkin are loaded with fiber, vitamin C for an immune boost, antioxidants and potassium. Pumpkin is also fairly low in calories despite delivering so many vitamins (like A, C, and E) and beta carotene which is excellent for skin and metabolic health. As we combine them in one place we get twice the benefits and can feel pretty good eating what feels like an indulgent treat for breakfast, as a snack or preworkout fuel!
